Carbohydrates are made up of three elements; Carbon, Hydrogen and Oxygen. These three elements combine in different ways to form simple and complex carbohydrates. Simple carbohydrates, also called sugars, include monosaccharides (e.g glucose) and disaccharides (e.g sucrose). These sugars can be found naturally in fruits and seeds among other foods. They can also be processed sugars which are added to food and beverages such as soft drinks and cakes. Complex carbohydrates include starch and fibre. They have more nutrients than simple carbohydrates and digest more slowly. Carbohydrates are important sources of energy and building blocks for important chemical structures in the body. Simple sugars and added sugars in particular, should be taken in moderation since they can lead to weight gain and other health problems.
